Zhenpeng Li

Zhenpeng joined the PaInT group as a PhD student in October 2022. Before that, he obtained a master's degree in food science and engineering, mainly designing diverse dispersions of protein/polysaccharide complexes (nanoparticles and gel beads) for the encapsulation of polyphenols and probiotics. Currently, he focuses on rennet coagulation and encapsulation properties of re-assembled casein micelles.
