Job description
The Food Structure and Function (FSF) research group is looking for a highly motivated and enthusiastic PhD student for a PhD project on egg replacement in bakery products. Egg and its derived components (egg white-egg yolk) have an important functionality in bakery products such as cake, sponge cake, pancakes, waffles, etc. The current trend is to replace animal-based ingredients with plant-based alternatives. This PhD project aims to develop microstructure-based strategies to realize plant-based egg substitution. Part of this PhD trajectory will be carried out within the framework of the TETRA-VLAIO project NOVOBAKE together with a consortium of companies on egg substitution in bakery products. The project funding is complemented by internal funding so that it is possible to obtain the doctoral degree.
As a PhD fellow, you will be responsible for the coordination and implementation of (part of) the scientific work plan of the project (literature review, analyses), the generation of project-related scientific output (project presentations, reports), scientific communication (publications, posters, conferences, etc.) and supervision of master's thesis and/or internship students working on the topic. In addition, you will also contribute to the general functioning of the research group. The ultimate goal is to obtain the doctoral thesis.
Job profile
- You hold a master's degree in Bioscience Engineering, Biosciences, Food Technology or equivalent, with a substantial knowledge of and interest in food science and technology, and sensory science. Preferably, you have experience with analytical approaches to study nano-, micro-, meso- and/or macroscopic properties of foods.
- Important additional qualifications are: a sense of initiative, team spirit, a sense of responsibility, motivation and dynamism, perseverance and good communication and reporting skills.
- Good English language skills are required.
WHAT WE CAN OFFER YOU
- We offer a full-time position as a doctoral fellow, consisting of an initial period of 12 months, which - after a positive evaluation, will be extended to a total maximum of 48 months.
- Your contract will start on October 1, 2024 at the earliest.
- The fellowship amount is 100% of the net salary of an AAP member in equal family circumstances.
